Balsamic Vinegar reduction

      If you like the flavor of balsamic vinegar, you are going to love it more when you make this sauce. When I reduced the Balsamic vinegar to a syrup was a big surprise for me, the change on the flavor was something I don't expected. This tasty and incredibly easy to make sauce, have many uses in cooking. Try it over your favorite salads, appetizers, fruits, ice cream, desserts, you name it. Can you imagine you can make something that good with only one ingredient. Ingredient: 1 cup of good quality balsamic vinegar  In small sauce pan at medium low heat add the balsamic vinegar and simmer until reduced to 1/4 of a cup.  It will look like a syrup and will take about 45 minutes. Transfer to small bowl and set aside until needed.  Let me know  in a comment what do you think about the flavor.

Lemon Curd

       This smooth and luscious lemon curd can be used as a filling between cake layers or to fill cookies, cupcakes and tarts. The fresh and fruity flavor of the lemon curd is perfect to use as a topping on a cheesecake.                                                                        It is important to use only non-reactive pots and utensils to cook lemon curd, due to the chemical reaction of the acids in the lemon juice with untreated metals. Stainless pots and whisks, as well as anodized aluminum and glass are recommended. The storage container for the filling should also be non-reactive.      I used a pot with a porcelain interior to avoid the reaction of the lemon juice and the metal. I changed my spatulas and whisk for one made out of silicon material....

Vanilla Caramel Sauce

     Caramel sauce are very simple to make. Instead of cream you can also use fruit juices, liqueur or wine. Often a small amount of butter is added for flavor.      I make this vanilla caramel sauce to pour over my Macadamia nut blondies and,  the combination was decadent!                                            Ingredients: 1 cup granulated sugar 1/4 cup water 2 tablespoon unsalted butter 3/4 cup heavy cream 2 teaspoon vanilla extract  pinch of salt a wooden spoon to stir the caramel In a medium pot over medium heat add 1/4 cup of water and pour 1 cup of sugar in the center. Mix the sugar until dissolved, stop stirring. Brush the sides of the pot with a wet pastry brush to prevent the sugar from crystalizing.
