    Key West Florida is one the most beautiful cities I ever seen. With the most spectacular sunset and Incredibles views surrounded the city, is one of those places you fell in love and don't want to leave.    U.S. Island city located at the southernmost tip of the Florida key archipelago. It's known for its coral reefs, destination for diving and snorkeling and for their famous Key lime pie.    With narrow streets and small shops line together where you can find all sort of stuff for your enjoyment daily life. Clothes, shoes, personal products, beauty salons, barber shops, coffee shops, bars, courtyards and gardens. Coquito Ice Cream

 The inspiration for this this lovely and refreshing ice cream comes from Puerto Rico's traditional drink for Christmas called Coquito. Rich, smooth and creamy this delightful ice cream is a perfect match for summer hot weather.                                                          Ingredients: 1 cup heavy cream 4 egg yolks 2 tablespoon granulated sugar pinch of salt 1 cinnamon stick 1 can condensed milk 1 can coconut milk 2 teaspoon vanilla extract pinch of nutmeg  1 tablespoon coconut rum(optional) In a small saucepan mix the egg yolks with the sugar. Vanilla Flan

     This is the first flan recipe that I learned how to make. It is simple, delicious with a creamy texture that melts in your mouth. Use the best vanilla you can find it is worth it.                    This photo was taken a few years ago when I was in culinary school. White Chocolate and Macadamia Nuts Cookies

     The other day my daughter asked me  if I could ruin a white chocolate macadamia nut cookie for her. I accepted the challenge and for a few weeks I worked to develop this cookie recipe. Blondies with swirl coffee caramel sauce

             I bake to make people smile. These blondies are very easy to make and bring smiles to the faces of everyone that tastes them.          To make these extra special I swirl some coffee caramel on top of the batter before I place the pan in the oven.  The smell is incredible!        I have always been fascinated with the science of cooking. Blend sugar and water together, cook the sugar until it turns into a beautiful light golden brown color then stir some coffee and cream together, add to the caramel. Now you have a wonderful concoction: coffee caramel sauce.       You want something better than that? Dulce de Platano (Sweet Plantain)

Cream Cheese Flan

       This is one of my favorite desserts, Cream Cheese Flan. Thanks to my sister-in-law Lucy who introduced me to cheese flan 38 years ago. Through the years I made some small changes to the recipe to suit my taste. Hope you enjoy this recipe as much as I have with my own family.                                       Ingredients: 8 oz. cream cheese(dice) 1-14 oz. can condensed milk 1-12 oz. can evaporated milk 1 cup heavy whipping cream 1 teaspoon vanilla extract 4 eggs 3 egg yolks Caramel (recipe below) 1- 8 x 8 x 2 cake pan (with caramel) 1- large roasting pan for the bain-marie Preheat oven to 325°F Combine cream cheese, condensed milk and evaporated milk in a blender and mix for 30 seconds.
