Cream Cheese Flan

       This is one of my favorite desserts, Cream Cheese Flan. Thanks to my sister-in-law Lucy who introduced me to cheese flan 38 years ago. Through the years I made some small changes to the recipe to suit my taste. Hope you enjoy this recipe as much as I have with my own family.                                       Ingredients: 8 oz. cream cheese(dice) 1-14 oz. can condensed milk 1-12 oz. can evaporated milk 1 cup heavy whipping cream 1 teaspoon vanilla extract 4 eggs 3 egg yolks Caramel (recipe below) 1- 8 x 8 x 2 cake pan (with caramel) 1- large roasting pan for the bain-marie Preheat oven to 325°F Combine cream cheese, condensed milk and evaporated milk in a blender and mix for 30 seconds. Guava Turnovers (Pastelillos de Guayaba)

     When I was little girl one of my favorites desserts was Guava turnovers. In those days you could only have them at the bakery. I always remember the first time I stepped in "La Sol de Borinquen" (the name of my hometown bakery) I didn't know that many pastries and cakes existed. It was like a dream.                                                          Through the years as I learned more about baking, I began missing all the pastries from my childhood.  I decided to do some research to see if I could make some.
