Surullitos fritos(corn sticks with cheese)

      Fried corn sticks or (surullitos de maiz con queso) are one of the most popular appetizers in Puerto Rico. The combination of fine cornmeal and sharp cheddar cheese give them a crunchy texture and unique flavor. Serve them at your next party and your guests are going to be pleased.

Ingredients:

1 1/2 cups of water
1/2 teaspoon salt
2 tablespoons unsalted butter

2 cups fine corn flour 
1 1/2 shredded sharp cheddar cheese 

Oil to fry
1 cup of water at room temperature
 in a small bowl

In a medium saucepan over high heat add the water, salt, butter and bring to a boil. In a heat resistant bowl add the corn flour and the cheese and mix well.

Carefully pour the boiling water over the flour and mix quickly until all the flour is wet. Let it cool for a few minutes until it's cool enough to handle.


Place a silicone mat or parchment paper on a baking tray and
and set aside. 
 Wet your hands and shape about a tablespoon of mixture into a thin oval. Place the corn sticks on the baking tray after you shape them. When you have shaped all the mixture place the tray into the freezer for 15 to 20 minutes.  This ensures the corn sticks will be nice and firm before you start frying. Reshape briefly if needed. 



Add about 2 inches of oil into a medium fry pan over medium high heat. Fry a few at a time making sure you don't overcrowd the pan.  Allow them to fry for about two minutes and then flip them over to ensure a golden color throughout. Remove from the pan and drain over paper towels.


Serve immediately with mayo Aioli (Mayo ketchup sauce) Recipe follow.


Ingredients:

1 cup mayonnaise
1 tablespoon ketchup 
1 garlic clove ground with
a pinch of kosher salt
fresh ground pepper to taste
1 teaspoon hot sauce(optional)

In a small bowl combine all the ingredients and mix well. Cover and place in the refrigerator until needed.
