Cranberry sauce

     A holiday classic, cranberry orange sauce is very simple to make from scratch and tastes so much better than the canned variety. Lightly sweetened with touches of cinnamon and vanilla it will go perfect with your turkey.

Ingredients:

1 package 12 ounce fresh cranberries 
1 cup granulated sugar
1 cinnamon stick
1/4 teaspoon Kosher salt
1/2 cup freshly squeezed orange juice


1 tablespoon finely grated orange zest
2 teaspoon vanilla extract

In a medium sauce pan at medium high heat add the cranberries, sugar, cinnamon stick, salt and orange juice.













Bring to a boil stirring constantly with a wooden spoon. When the cranberries start popping turn the heat to medium low and quickly mash the cranberries against the side of the pan or use an immersion blender until the desired consistency is reached.
















Remove the pan from the heat and stir in the orange zest and vanilla until well combined. Remove the cinnamon stick and transfer the sauce to sterilized jars.



















Note: 

Can be made one week in advance.

I started mashing the cranberries with a wooden spoon but it was too slow for me so I finished it using my immersion blender. It was easier, quicker and I was able to achieve the perfect consistency.
