Pineapple, banana and strawberries smoothie

     My grandson used to love pineapples and suddenly he stopped eating them.  Recently, I decided to give it another try. By taking frozen pineapple chunks, strawberries and bananas I created this healthy milkshake that he loved. The addition of almond milk is a good alternative for people who can't have dairy products.                      dessertsandgoodfood.blogspot.com Ingredients: 4 ounces pineapples chunks, frozen 2 ounces of almond milk 4 ounces strawberries  1 large ripe banana Combine the frozen pineapples chunks and almond milk in a blender and blend until smooth. Add the strawberries and banana pieces and blend until smooth. Garnish with pineapples and strawberry.

Cheese and pineapple turnovers

      Make this easy pastry recipe for you next party using my homemade pineapple jam recipe. You are going to delight your friends.      dessertsandgoodfoodblogspot.com Ingredients: 1 box puff pastry 8 ounces cream cheese 1 tablespoon granulated sugar 1 teaspoon vanilla extract 1 cup simple syrup (recipe below) 1/4 cup granulated sugar 1 egg white mixed with 1 tablespoon of water Defrost the puff pastry 20 minutes on the counter. Meanwhile in a small bowl mix the cream cheese and vanilla. Set aside. Lightly sprinkle the work surface with flour and unfold the puff pastry.  Lightly dust the rolling pin and roll over the dough a couple times to smooth out the surface. Cut the dough in 3 x 4 inch rectangle and put 1 teaspoon of the filling in the center. With the pastry brush lightly apply the egg wash over the edges of the pastry. Pineapple jam

Pineapple is one of the fruits I grew up with and one of my favorites. When the harvest started you would find many vendors near the road selling the pineapples.  I have never tasted better pineapples than the ones that grew and still grow in Puerto Rico.   A few weeks ago I found some really nice pineapples in my supermarket and I decide to make a jam with them. I was surprised at how good this jam turned out.  My family was delighted with it as well.  Ingredients: 4 cups of pineapples, in chunks 4 cup of sugar 2 tablespoon of unsalted butter 2 tablespoon fresh lemon juice Chill a small plate in your freezer to test the jam Pour the pineapple chunks in the bowl of a food processor. Pulse until the pineapple chunks are very small. I ended up with 4 cups of pineapple.      In a medium pot at medium high heat add the pineapple and bring to a boil stirring to prevent burning the jam. Beefsteak encebollado

     Beefsteak with onions is one of the most popular ways to make beef in Puerto Rico. Accompany this dish with rice and beans, fried plantains, plantain spiders or just with a salad. This is my version and my favorite way to make it: as a sandwich.                                                   Ingredients: 1 1/2 pound of sirloin steak,  cut in 2 inch strips 1 1/2 teaspoon of Adobo(see note) ground black pepper to taste 3 tablespoon olive oil 1 tablespoon apple cider vinegar 2 large onions cut in thin slices Mayo Aioli Italian or French bread Sliced tomatoes Fresh lettuce  In a medium bowl add the first 4 ingredients and mix well. Season the steak and set aside.  In a medium saucepan over medium high heat add the oil, onions, the steak and mix until combined.  Cook for about 1 minute. Remove the meat from the skillet and set aside. Turn the heat to medium, cover the saucepan and continue to cook until almost all the liquid has evaporated.
