Yucca al Mojo

     Yucca is a root similar to a potato.  It is also known as cassava or mandioca. Look for firm, blemish free tubers. In Puerto Rico we cook yucca in many ways. For today's recipe I used frozen yucca. It can be found in the  supermarket frozen section. It is already peeled and the only thing you need to do for this recipe is to cook it.

Ingredients:

3 pounds of frozen yucca
about 8 cup of water,to cook the yucca
Salt to taste

For the sauce:

1 1/2 cup olive oil
pinch of salt

1/2 cup apple cider vinegar

3 large onions cut in thin slices
10 garlic cloves, slices
1 cup green olives
2 large roasted bell peppers, cut in strips
1 chicken or vegetarian bullion
1/2 teaspoon black pepper
2 small bay leaf




In a large sauce pan at medium low heat add the olive oil, onions and a pinch of salt. Cook stirring often until transparent about 4 minutes. Add the vinegar  and cook for 2 more minutes. Add the chicken bullion, ground  black pepper, garlic, bay leaf, roasted peppers, stuffed green olives and cook for about 5 minutes.   Remove from the heat and set aside.

To cook the yucca:


In a large pot at high heat bring the water to a boil and carefully add the salt and the yucca. Cook for 30 minutes or until tender adding water as needed. Transfer the yucca to a tray to cool down. Cut the  yucca in 2 inch long pieces and transfer to a serving bowl. Cover with the sauce and mix well.

Variations:

For yucca with chicken: 



one or two chicken breast halves
salt and pepper to taste
1 teaspoon of fresh thyme or
1/2 teaspoon dry
3 tablespoon olive oil

Mix all ingredients and rub onto the chicken.  Cover and transfer to the refrigerator for 15 minutes. Preheat the oven to 350°F and bake for 30 minutes or until the chicken reaches an internal temperature of 165° make sure to rotate  the chicken halfway through baking.  Cut the chicken in medium dice and add to the yucca.

For the bacalao version:




1 pound bacalao(salted cod fish)

Look for the gazpacho recipe and follow the instruction for how to process bacalao. Ad the bacalao to the yucca and mix well.

Look for the bacalao (salted cod fish) in the seafood section in your supermarket.
