Domplines (Puerto Rican Fried bread) with stew beans
Domplines is a Puerto Rican fried bread. It is my family's favorite.
My grandson is the pickiest eater I have ever seen, but he loves domplines. He runs to the dinner table when he sees me with his plate full of the fried bread and stewed beans. It is one of the ways we get some protein in him. He is not a fan of meat.

Ingredients:
3 cups all purpose flour
1 teaspoon salt
1 1/2 teaspoon baking soda
1 egg lightly beaten
1/4 cup canola oil
1/2 cup cool water
Oil for frying
In a large bowl mix the flour, salt and baking soda. In a small bowl mix the 1/4 cup of canola oil, the egg and the water and pour in the center of the flour.
Mix with a spatula until the flour is wet. Transfer to a lightly floured surface, knead until you have a very soft dough (add water if needed)
Cover and let rest for 20 minutes.
Divide the dough in 12 equal pieces.
Using a rolling pin flatten the pieces until very thin (about 1/8 inch) Use a cookie tray covered with parchment paper to put your domplines. Cover them with plastic wrap as you go.
Flatten the dough once more before frying then. Fry the domplines one by one pouring hot oil over them until they expand. Turn to the other side. It takes less than a minute to fry one.
