Green beans in garlic sauce


     The combination of extra virgin olive oil and butter makes these fresh green beans very tasty. This is a great side dish to go with my Pineapple Roasted Salmon.

Ingredients:

1 pound of green beans
 cut in 2 inch long pieces
2 garlic cloves
1 tablespoon extra virgin olive oil
2 tablespoons unsalted butter
salt and pepper to taste


Water to blanch the green beans

In a medium pot over medium high heat bring the water to boil. Blanch the green beans for about one minute, transfer  the green beans to a medium bowl with very cold water to stop the cooking process. Drain the green beans and transfer to a medium bowl. Set aside.

In a medium saucepan over medium low heat add the oil and butter. When the butter is melted add the garlic and sauté for 30 seconds. Add the green beans, salt and ground black pepper to taste and sauté for one minute. Remove from the heat and transfer to a serving plate.
