Roasted Salmon with Pineapple Marinade

     The combinations of flavors in the marinade pair nicely with the salmon. You'll love the rich flavor and firm texture of the salmon. I place it on a bed of fresh green beans flavored with a butter garlic sauce.

Ingredients:

Marinade:


2 tablespoon olive oil
3 tablespoon rice wine vinegar
3 tablespoon soy sauce
2 garlic clove, mince
1/4 cup pineapple jam
Ground black pepper to taste.

4 salmon fillet about 4 ounces each,
 lightly rinse and pat dry

In a small bowl mix all the ingredients for the marinade and 
set aside.

In a medium bowl carefully add the salmon and pour the marinade over it. Cover the bowl with plastic wrap and transfer to the refrigerator for 1 hour.

Turn the oven broiler on Hi. Transfer the salmon to a baking sheet covered with aluminum foil. Generously spoon the marinade over the salmon. Broil the Salmon for about 7
minutes. Depending on the thickness of your piece of salmon it might take more or less time.



To serve:

Using tongs, pick up the green beans and place then into the center of the plate. Set the roasted salmon over the green beans. Using a pastry bag fitted with star tip pipe the mashed potatoes behind the salmon.
