Warm banana fritters with vanilla caramel sauce

1/2 cup all-purpose flour
1/2 teaspoon baking powder
1 teaspoon granulated sugar
1/4 teaspoon table salt
1/2 teaspoon ginger
pinch of nutmeg
The zest of 1 large lemon
1/2 cup room temperature water
3 bananas yellow and firm, peeled and cut into 1-inch lengths
1 cup Panko breadcrumbs
Vegetable oil for deep-frying
Vanilla caramel sauce
Confectioners' sugar, for dusting
Heat the oil to 350°degrees
Combine flour, sugar, salt, baking powder, lemon zest, nutmeg and, ginger in a mixing bowl. Whisk in water until smooth batter form.
Place bananas into the batter, coating lightly. Roll in the breadcrumbs.
Deep-fry until golden brown, about 5 minutes.
Dust with confectioner sugar.
