     Today I want to share a recipe for a very special salad. It has been on our Puerto Rican table since before I can remember. It is one of those meals you never change, because there is nothing you can do to make it better.                        Ingredients: 1 pound of bacalao, recipe below             2 large avocados, medium dice 2 large Roma tomato, small dice                 1 small yellow onion, small dice                    1/2 cup olive oil  1 tablespoon lemon juice In a large salad bowl add all the ingredients and gently fold until combined.       Sweet, salty and crunchy, perfect for brunch, lunch guests or when you need something quick and easy to prepare. This salad makes a great open face sandwich.  Serve it with some french fries on the side for a complete meal. White Chocolate and Macadamia Nuts Cookies

     The other day my daughter asked me  if I could ruin a white chocolate macadamia nut cookie for her. I accepted the challenge and for a few weeks I worked to develop this cookie recipe. Chicken Tenders with Chardonnay Honey Mustard Sauce

     This is one of those recipes I have made for my family for years and I am just now sitting down to write it. When you have picky eaters you have to do whatever you can to feed them.        A few years ago my daughter Stephanie started making honey mustard sauce every time I made chicken tenders. For a long time I didn't even pay attention to the sauce. I ate my tenders with ketchup and, I was happy with that. A few months ago I tasted the sauce for the first time and to my surprise I really liked it. I have to confess I have never been a fan of mustard. I asked my daughter for the recipe and she told me the recipe came from when she was working in the military. They made the sauce to taste taking yellow mustard and then adding honey until the right consistency and flavor was achieved.            If you are a fan of coconut you are going to love this Flan.  It is creamy and full of coconut flavor. Roasted Salmon with Pineapple Marinade

     The combinations of flavors in the marinade pair nicely with the salmon. You'll love the rich flavor and firm texture of the salmon.       The combination of extra virgin olive oil and butter makes these fresh green beans very tasty.
